Soups are a great quick evening meal and a great way to use up vegetable that are going a little squiffy in the fridge! Lunches are another grey area for me. At work I often don’t have time to sit and eat a proper lunch or I eat with the students in the canteen so a sandwich is key. I found sandwiches a tricky field to navigate when I became vegan as I didn’t want to eat lots of vegan cheese. Some of my favourites are bean based which is great as it keeps you fuller for longer.
Carrot Soup
Ingredients 2 onions sliced 4 cloves garlic crushed 5 cups carrots sliced Handful fresh parsley Small handful of fresh thyme (or tablespoon of dried thyme) 700ml vegetable stock Method Put the onion in a pan and saute it off for 5 minutes in a little oil.
